Dallas Style Brisket Tacos

I was first introduced to brisket tacos when I moved to Dallas. They are so good and it turns out pretty simple to recreate at home. I used the Homesick Texan's recipe along with homemade black bean dip and salsa for Mike and I this week. Serve in corn tortillas with onions, poblanos, monterrey jack and a little of the pan juice.




One 3 lb brisket has a lot of meat so I froze some of the meat with extra broth for a rainy day when we're scrambling for something to eat.

Raspberry Champagne Popsicles

I've been saving, printing, and pinning several popsicle recipes over the past few weeks. I was really drawn to a blackberry prosecco one. I decided to improvise because I already had mini champagne bottles in the fridge and raspberries were half the price of blackberries last week.

Here's what they look like... cute, yes. Taste good, no.

Meatball Subs & Italian Fries

During the week, I made a mini-meatball lasagna for a friend and while I had all the ingredients on hand, I made an extra platter of meatballs for Mike and I. Having the already prepared meatballs made it easy to whip up meatball subs and Italian fries for lunch on Saturday.

I used my basic turkey meatball recipe and added frozen chopped spinach to the mixture before baking. Then its all simple... french bread + marinara sauce + meatballs + mozzarella.

For the "Italian" fries... bake your favorite frozen fries. After they are fully cooked, and still hot, toss with salt, pepper, fresh flat leaf Italian parsley, minced garlic and finely grated parmesan.
