Shredded potato, 2 big handfulsPreheat oven 425 and spray a baking sheet with non-stick cooking spray. Mix all ingredients in a bowl. Make potato pancakes using 2 to 3 tbsp measures, forming pancakes about the size of yuor palm about 1/4 inch thick. Place on baking sheet and bake for 10-15 minutes, then turn the pancakes over, and bake for an additional 5 to 10 minutes (should be golden brown on both sides when done).
Shredded onion, 1/3 large onion
Grated sharp white cheddar, small handful
1 green onion, thinly sliced
3 tbs. flour
1 large egg
Salt & pepper

Fat Tuesday Pancakes

I found this recipe last year in the Dallas Morning News. Here are the parts of the recipe that I used...
I made the batter by combining the mix and water. Brushed a little butter in a preheated pan (slightly less than medium heat) and poured 1/4 cup of the batter into the pan (the batter is thinner than normal in order to be able to roll the pancakes).
Once the pancakes were all cooked, I took two halves of the sausage, rolled them in a pancake and topped with syrup. Also added some sliced banana on the side!

Alice in Wonderland
I am a huge fan of Disney movies, especially this one... I'm also a big Johnny Depp fan as well as Anne Hathaway. Naturally, I'm super excited about Tim Burton's Alice in Wonderland. I started reading Alice's Adventures in Wonderland and Through the Looking Glass by Lewis Carroll today. I can't wait for the movie on March 5!

Strawberry Pancakes with Honey Syrup
In some areas, the Tuesday before Ash Wednesday is also known as "Pancake Tuesday." In honor of this fun tradition of lots of pancakes, I'm making pancakes each weekend in February. (This was a very last minute idea that came about late last night as I watched Bobby Flay's Blueberry Pancake throwdown episode.)
I didn't have everything I needed to make pancakes from scratch so I started with the box of Aunt Jemima Buttermilk Pancake mix and made the batter according to the box. To make them a bit special, I thawed a handful of frozen strawberries last night and tossed them into the food processor this morning. I stirred the smooth strawberry mixture into the pancake batter right before cooking for strawberry pancakes.
Mike likes lots of maple syrup on his pancakes but I like a less syrup and something lighter in taste. So, I searched a bit online and found a recipe for honey syrup:
Bring 1/3 cup water and 1/3 cup sugar to a boil, cook over medium heat until sugar has dissolved. Lower heat to low and add in 1/3 cup honey, stir to dissolve honey into sugar syrup. Keep warm until ready to serve.




Everything turned out yummy for a last minute idea. Next weekend will be a bit more planned out... check back for "Fat Tuesday Pancakes" in honor of Mardi Gras!
